We all know what we love about Greek yogurt: its creamy texture and mild taste. Somehow the taste of Greek yogurt is just so much better than American yogurt. Why is that?
Why is Greek Yogurt Creamier?
Well it turns out that the creamy texture and better taste result from the same process: straining. Greek yogurt is merely strained American yogurt. The whey is what is taken out, and whey is watery. So when you take out the whey/water, you’re left with a denser and hence creamier yogurt.
Why Does Greek Yogurt Taste so Much Better?
American yogurt is more watery and has much more lactose in it. They whey contains lactose and sugars. The taste is much more about sugar than anything else. Sure, you can buy full fat yogurt with the cream on top, but you’re still mixing in the whey when you stir it up. In Greek yogurt, the whey is reduced and the taste of the yogurt, the cream, is prevalent. The taste of Greek yogurt is all about the cream itself. When the cream tastes so good, you don’t need as much sugar to make it palatable.
