What is Greek Yogurt?

We all know what we love about Greek yogurt: its creamy texture and mild taste.  Somehow the taste of Greek yogurt is just so much better than American yogurt.  Why is that?

Why is Greek Yogurt Creamier?

Well it turns out that the creamy texture and better taste result from the same process: straining.  Greek yogurt is merely strained American yogurt.  The whey is what is taken out, and whey is watery.  So when you take out the whey/water, you’re left with a denser and hence creamier yogurt.

Why Does Greek Yogurt Taste so Much Better?

American yogurt is more watery and has much more lactose in it.  They whey contains lactose and sugars.  The taste is much more about sugar than anything else.  Sure, you can buy full fat yogurt with the cream on top, but you’re still mixing in the whey when you stir it up.  In Greek yogurt, the whey is reduced and the taste of the yogurt, the cream, is prevalent.  The taste of Greek yogurt is all about the cream itself.  When the cream tastes so good, you don’t need as much sugar to make it palatable.

DIY Greek Yogurt

Been craving some Greek yogurt lately? If so, why not try your hand at making your own rather than buying it? You can make a delicious Greek yogurt in five (well, really four) easy-to-follow steps. The ingredients you’ll need are 2 quarts of milk, 2 teaspoons of plain yogurt, ¼ cup of instant dry milk, and a thermometer. Sounds easy, right? Take a look at the steps below and give it a try!

Step 1:

First, heat the 2 quarts of milk in a saucepan. Stir it until it reaches 180 degrees. Once it reaches that heat, take it off the burner and let it cool slightly until it’s between 110-120 degrees. This is where your thermometer comes in handy. Make sure you check the temperature to make sure you’re on the right track.

Step 2:

 

Next, you need to combine the milk and yogurt in a bowl. Then you’re going to add the dry milk, cover the bowl, and wrap it in a heavy dish towel.

Step 3:

Now you need to preheat your oven for a minute or so. Then simply stick your bowl in the oven and let it incubate for 8-10 hours. Make sure you plan ahead if you are making this for a party or something since this step takes a little while.

Step 4:

Grab a strainer and put it over a bowl. Pour the yogurt in that strainer, cover it, and put it in the refrigerator. Leave it for several hours to let it set up.

Step 5:

Enjoy your delicious yogurt! Add vanilla if you like a little extra flavor.

As you can see, making your own Greek yogurt is quite easy. All it takes is a few simple ingredients. So have fun and enjoy!
